My Mum's Place - yet again

No visit to My Mum's Place is ever complete without the following dishes:

On my last visit, Shirley made a variation of the Steamed Chicken with Salted Fish dish. Slices of Roast Pork were added to the dish. The Roast Pork imparted a touch of smokiness to the dish which though flavoursome, had a clean taste about it. As usual, the chicken pieces were succulent and the dish was not exceedingly salty. It went especially well with steamed rice. This is a MUST-TRY!

Shirley was in a good mood, as always, and happily told us that she had cooked some Black Vinegar Pigs Trotters (a traditional confinement dish for new mothers which is not easily available) for another client. She had cooked just a little extra and gave us the remaining portion to try. I'm not a huge fan of this dish but the sauce was very fragrant and not overwhelmingly sour. The pork pieces were soft and perfectly infused with the concoction consisting of the warm spiciness of young ginger, the caramel flavour of brown sugar, the smoky and mildly tart yet slightly sweet flavour of black vinegar, and the inherent sweetness of the pigs trotters which had been simmered over a few hours bone-in. The hard-boiled eggs were fantastic when smothered with the sauce, especially when the yolks had absorbed the flavours. This is definitely a MUST-TRY! To avoid disappointment, try to call about 5 days in advance to place your order.
