SFF 2011 Recipe: Black Pepper Fried Flat Noodles (with demo video)

Recipe for Black Pepper Fried Flat Noodles (Serves 1) courtesy of The Gateway Hotels and Resorts
100 gm Fettucine (flat pasta) 
10 ml oil 
15 gm butter 
20 gm shallots (thinly sliced)
10 gm garlic (chopped) 
2 gm ginger (shredded) 
2 gm lemongrass bulb (chopped)
50 gm tomato (small diced) 
5 gm black pepper (ground coarsely) 
3 gm curry leaves (shredded) 
1 large red chili (chopped) 
3 ml black soya sauce 
Sugar to taste 
Salt to taste 
10 gm spring onion 
20 gm mushroom (sliced) 
20 gm bell pepper (mix of three colours) 
20 gm cabbage (shredded) 
20 gm potatoes (boiled strips) 
20 gm beansprouts (blanched) 
10 gm coriander leaves 
15 gm tomato ketchup  2 tbsp stock
Method of preparation:- 
1) Boil the fettucine and set aside.
2) Heat oil. Add chopped garlic and sliced onion, sauté slightly. Then add chopped chili, ground black pepper and toss.  3) Add all the vegetables except the coriander leaves and spring onion. Cook it over high heat. 4) Add 2 tablespoons of stock before adding salt, sugar, black soya sauce and tomato ketchup. 
5) Thicken the sauce and check if the seasoning is sufficient. 
6) Add the fettucine and toss it well.  7) Add coriander leaves and spring onion, mix well. 8) Before removing from heat add the frozen butter to the pan for sheen.
