Man Fu Yuan's 19th Anniversary Promotion in July

Man Fu Yuan is celebrating it's 19th anniversary at InterContinental Singapore with two special menus featuring 19 signature dishes each. Priced at $19++ per portion, the menus will only be available in July.

Executive Chef Chan Yiu Kan's 38 special creations have been divided into 2 menus of 19 dishes each - Menu 1 from 1 to 15 July 2014 and Menu 2 from 16 to 31 July 2014. I was invited to sample highlights from Man Fu Yuan's 19th Anniversary Specials a few weeks back and returned with friends for a gathering last weekend. I will focus on my favourite dishes in this post.

Lunch commenced with a decadent bowl of Braised Four Treasures Soup prepared "Tan Family" style, imperial cuisine hailing from the Qing Dynasty. The rich broth was made with a wide variety of ingredients such as aged chicken, aged duck, dried scallops and Yunan Ham that had been simmered for eight hours before the "Four Treasures" were added. Comprising sea cucumber, abalone, fish maw and mushroom, the "Four Treasures" provided texture and more umami goodness to the flavourful soup. Chockful of ingredients, which also includes crab meat, the soup is substantial and addictive. A Must-Try, this is no longer on the current menu but may be available on request.

This was one of my favourite dishes on the special menu. The crisp but juicy chunk of pork rib had been coated with tasty and slightly sandy-textured Salted Egg Yolk. Check ahead if you can get a portion of this dish when making reservations as this is also a Must-Try!

A Man Fu Yuan signature dish, the Smoked Duck with Chinese Tea Leaf is one of the 19 items on the current menu. The crisp skin and succulent duck bore the aroma of Red Robe Tea and was tasty without being too salty for consumption on its own. A Must-Try!

I didn't eat this dish during the media tasting but on a recent visit with friends. The Braised Beef Brisket with Radish was a hearty and flavourful stew served in a claypot to keep it warm. The tender beef cubes, tendons, tripe and handmade Beef Balls had been simmered in a rich Chu Hou Sauce. As usual, the handmade beef balls at Man Fu Yuan were springy and had a hint of dried tangerine peel. Perfect with steamed rice, this is a Must-Try!

This dish may not look pretty but it sure was tasty! The acidity from the vinegar helped to cut through the fattiness of the tender chunks of braised pork ribs. Worth a try if you love pork ribs. This dish is on the current menu.

A Must-Try if you're a carb-lover or crab-lover or both! The vermicelli strands had absorbed the rich flavours of the fresh Sri Lankan Crab as well as the stock that was used in the preparation of this dish. Available on the current menu till the end of the month.

My friends and I ordered this dish during my visit last Sunday to add more fibre to our meal. I love the simplicity of sauteed vegetable dishes because the crunchy and juicy vegetables add a refreshing touch to the meal. This is worth a try if you love your greens.

An item that has yet to be featured on the a la carte menu but one of my favourite dishes at Man Fu Yuan is the Fried Carrot Cake. Man Fu Yuan's interpretation of a classic hawker favourite features cubes of steamed carrot cake that had been coated in flour before being deep-fried and fried with beaten eggs and XO Sauce. I loved the crisp crust that forms around the soft, fluffy carrot cake as well as the tasty browned bits of fried eggs. This dish has to be eaten immediately after serving as the crust around the carrot cake loses its crispiness when it cools. Check with the restaurant for availability and price when making your reservations. The Fried XO Carrot Cake at Man Fu Yuan is a Must-Try!

In case you missed reading about the Deep-fried Egg Custard Buns in my post about Man Fu Yuan's Taste of Nostalgia promotion, you have to try these buns when you visit! The crisp browned skin of the buns was not greasy and there was a good balance of bun pastry with the filling. The molten core of salted egg yolk custard was savoury and slightly sweet. Be careful when eating this bun as the filling can be really hot and may burn your fingers or tongue when it flows out. This is still the best I've had in Singapore all year and a Must-Try!

PPS: On my last visit, I didn't keep the bill as one of my friends paid for the meal first. Our lunch with dim sum cost us about $60 per head.
