Had lunch about 2 weekends ago at a Food Centre in New Upper Changi Road. My mum mentioned that the
Fish Head Beehoon at this place is pretty good. I like Fish Beehoon as long as the stock is robust and the fish is fresh. Yes, it must be fresh by
Asian standards.
While carrying it back to the table, I felt hungrier because of the aroma of the steaming hot soup. I could smell the sweet fragrance of
Shaoxing Wine. If you're wondering why my beehoon looks a little different, that's because I ordered
Mee Swa (Wheat Vermicelli aka Longevity Noodles) instead of Beehoon. I like mee swa because it is softer. Now, before you start thinking that I'm a geriatric, I prefer mee swa to beehoon because its easier to cut with the chopsticks. The stock is sufficiently robust with a nice balance of richness, sweetness, a hint of alcohol and sesame oil. The fish slices are fresh and smooth. This is definitely worth a try if you happen to be in the area.
